Homebrew Beer Recipe
3.3 lb Wheat Liquid Extract
2.0 lb Light Dry Malt Extract (DME)
1.0 lb Wheat, Torrified
12 oz Pilsner Malt (German)
1.0 oz Pearle Hops (bittering)
1.0 oz Hallertau (finishing)
Weihenstephan Weizen (Wyeast 3068) or American Wheat or Safbrew WB-06 (dry)
You'll need two pots. A "mash pot" (2+ gallon) and a "brew kettle" (4+ gal).
In (smaller) mash pot, heat 5 qt of H20 to 160-165F. Put grains in grain bag. steep at ~ 160F for 40 min. Meanwhile, heat 2 gallons H20 to ~165F in the brew kettle. When grains finish steeping, add 2 qt of heated water to the mash pot to created a diluted "grain tea". Pull out grain bag and hold over brew kettle (or use strainer). Rinse grain bag with the diluted grain tea. All liquid should now be in the brew kettle.
Bring wort to a boil. Turn off heat and stir in dry malt extract (DME). When it is dissolved, return to boil. Start 60 min timer. Add bittering hops. At 15 minutes (before end of boil), turn off heat and stir in liquid wheat extract. Return to boil and add finishing hops. At end of boil, cool, transfer to fermenter and add H20 to reach 5 gallons. Aerate wort and pitch yeast. Ferment around 67-72F. Rack to secondary when fermentation subsides. Bottle in a couple of days when beer clears.
Replace extracts with:
4 lbs 2 oz Malted Wheat
3 lbs 4 oz Pale Malt
all other ingredients the same.
