New All Grain System (Keggles?)

Before moving to Portland, I did a considerable ammount of extract brewing at a brew-on-premise. I'm interested in getting an all grain setup that would allow me to do both 5 and 10 gallon batches. Keggles seem to be an economical approach, compared to new, large stainless pots. Can a 5 gallon batch be brewed in a keggle, or is the diameter too large to allow lautering? It seems that most people go with a 3 vessel system, HLT, MT/LT, and kettle. Is there a great downside to using a single vessel for the HLT, then draining it before adding wort and then using it as a kettle, therefore only having 2 vessels (HLT/kettle and MT/LT)?

The Cheapest, Easiest Way to Brew All Grain

I use a system nearly identical to this one, and it works great. If you want it to work for 5 and 10 gallon batches, just get a 64 qt coleman x-treme cooler - it will easily do the trick.
