Extract Ingredients: 

4 lb Demerara or Brown Sugar
1 lb Light DME
1 lb Carapils Malt
1 lb Crystal 15L Malt
6 oz flaked oats

8-10 oz fresh grated ginger or 2 oz dried ginger

1 tsp gypsum (optional)
1/2t irish moss (optional)
Wyeast European Ale (liquid), or Windsor Yeast (dry)
(optional: 1 tsp of yeast nutrient)

Recommend: 2 small grain bags or 1 large one for all this grain.

Extract Instructions: 

Fill sanitized fermenter with 3 gallons of clean water.

To brewing pot add 2 gallons of water and bring to 165F. Put grains and oats in a grain sock and soak for 30 minutes at about 155F. Remove grains and stir in demerara (turn off heat until dissolved). Bring to boil, add half of ginger, and boil for about 15 minutes. Add the rest of ginger at end of boil and turn off heat. Cool to about 75F and pour into fermenter. Pitch yeast and follow regular fermentation procedures.

5 lbs Demerara sugar
8 oz weyermann pilsner
12 oz carapils
12 oz crystal 15
6 oz flaked oats

16 oz peeled and grated ginger (steeped in wort, but not added to fermenter)
1/2 t irish moss
Denny's fav yeast
