182.4 oz Pale LME

Grains
22 oz Roasted Barley
14 oz Special B Malt
8 oz Caramel/Crystal Malt (60L)
14 oz Chocolate Malt

Hops
1.23 oz Chinook (13%)
3 oz Goldings (5%)

Yeast
2 pkgs California Ale (White Labs #WLP001)

Adjuncts
4 oz Ancho chili
4 oz Baker's chocolate (unsweetened 100% cacao)
.5 oz Cinnamon stick
1/4 tsp Irish Moss

Extract Instructions: 

1. Steep grains at 150-160 degrees for 60 min.
2. Sparge grains
3. Add LME and bring to boil
4. Boil 60 min.
5. Hop schedule
- Chinook for 60 min.
- 1.5 oz Goldings for 15 min.
- 1.5 oz Goldings for 1 min.

6. Adjunct schedule
- Irish moss for 10 min.
- Baker's chocolate for 10 min.
- cinnamon stick for 5 min.
- Ancho chilies for 5 min.

7. Cool to 70 degrees
8. Pitch yeast
9. Primary for 12 days at 68 degrees
10. Secondary for 19 days at 68 degrees
11. Bottle beer and age at 52 - 60 degrees for 4 weeks or more!
