Beyond the Ordinary Bitter^2
Homebrew Beer Recipe
3.3 lb Breiss Pilsen Light LME
1 lb Pilsen Light DME
14 oz Crystal 10L Malt
8 oz Belgian Candi Syrup D (SRM 80)
1 oz Challenger Hops (7.0%AAU, bittering)
2 oz Fuggle Hops (finish, dry)
1/4 tsp Irish Moss
1 tsp Burton's Water Salts
Wyeast 1275 Thaymes Valley
Heat 2 gal H20 to 155F. Steep grains for 30 minutes, holding temp around 150-155F. Sparge (rinse) with 1.5 gal of H20 at 150F and remove grains. Bring to boil. Turn off heat and stir in dry malt extract (DME) until dissolved. Turn heat back on and bring to boil. Start 60 minute timer.
@ 60 min, add 1.0 oz challenger hops and water salts.
@ 15 min, stir in liquid malt extract (LME), being careful to turn off heat until it's dissolved.
@ 5 min, add 1.5 oz fuggle hops (package remaining 0.5 oz hops tightly and put in fridge).
Cool wort to around 90F and pour into sanitized fermenter. Add clean water to reach 5 gallons. Cool to 70-80F and pitch yeast. After primary fermentation subsides (5-10 days), rack to secondary. Store--at a cool temp if possible--for 5-20 days. Add remaining 0.5 oz fuggle hops to secondary 5 days before bottling.
Use extract ingredients above, except replace DME and LME with:
6 lb 4 oz Pale Malt (Marris Otter)
TODO: mashing instructions. Mash for higher fermentability, as the crystal malt will leave some residual sweetness and body.
