Homebrew Beer Recipe
11 lbs Pilsen Malt Extract
1 lb 2 row malt
8 oz crystal 120
8 oz Vicotry
1 oz Magnum @ 60 min
2 oz Centennial @ 45 min
1 oz Magnum@ 30 min
2 oz Centenial @ 1 min
dry hop 7 days - 2 oz of Centennial, 2 oz of chinook, 4 oz Simcoe
Irish moss optional 1/4 t.
Yeast - Wyeast Thames Valley Ale
Bring 3 quarts of water to 155 degrees. Steep grains in grain bag for 45 min. Sparge with 1.5 gallons of water at 170 degrees. Bring total volume to 3.5 gallons. Bring to a boil. Turn off heat and add 1/2 the LME. Stir to dissolve. Return to boil. Add hops according to above schedule. At the last 15 min add the remaining LME (turn off heat to avoid scorching pan) and add the irish moss. Bring back to a boil and boil 15 min. Cool wort to 80 degrees in ice bath or using wort chiller. Pour into fermentor. Top off to 5 gallons. Aerate. Pitch yeast.
IBU actually 107. ABV approx 9.2%. FG may be 1.012 if fully attenuated.
